Artichoke Focaccia Pizza
Preparation time: 10 min Servings: 8
Cooking time: 20 min
Ingredients:
1/2 cup mayonnaise
1 tsp pepper
1 cup grated Parmesan cheese
1 red bell pepper, seeded and chopped
2 tbsp olive oil
2 cups mozzarella cheese, shredded
1/4 tsp cayenne
1/2 cup flat leaf parsley, chopped
14 oz artichoke hearts, drained and quartered
2 tsp garlic, coarsely chopped
1 10 inch focaccia bread, sliced in half horizontally
Cooking Directions:
Preheat oven to 375°F. Combine first 3 ingredients, 1/2 cup Parmesan, and next 5 ingredients in a bowl. Mix thoroughly. Place each foccacia half on a cookie sheet and drizzle each half with 1 tablespoon oil and 1/4 cup Parmesan. Divide and spread artichoke mixture on each focaccia half. Bake 20-25 minutes or until bubbly.
Veggie/Brown Rice Pizza
INGREDIENTS
2 egg whites, beaten
1/4 cup red or green bell pepper, chopped
2/3 cup purchased pizza sauce (or check out our other recipes)
1 cup nonstick cooking spray
3 cups cooked brown rice, cooled
1 cup mozzarella cheese, shredded
1 tsp black pepper, ground
1 cup mushrooms, sliced
1 clove garlic, crushed
1 tbsp grated Parmesan cheese
1 green bell pepper, seeded, cut into rings
COOKING DIRECTIONS
Preheat oven to 400°F. Combine cooled rice with 1/3
cup mozzarella cheese and egg whites. Press into a
12 inch pizza pan sprayed with cooking spray. Bake
for 5 minutes.
Combine pizza sauce with pepper and garlic.
Spread over the baked rice crust. Top with next four
ingredients and sprinkle with the remaining
mozzarella cheese. Garnish with green pepper
rings. Bake for about 10 minutes.
Making Pizza – Part 1 – Bread Machine Dough
Recipe for Crispy Crust Bread Machine Pizza Dough: Put the below ingredients in the bread machine pan in the following order as listed: 1.5 cups almost hot water 1.5 tsp salt 1 Tbs sugar 2 Tbs butter 4.25 cups flour 2 tsp of ‘best for bread machine’ yeast. If your yeast is old or you can’t remember when you last used it, just get new yeast. Even if it’s in the best before date. This is the most important factor of the dough turning out good. Put it on the 2lb or largest setting. Although the bread machine will claim it’s done in 1 or 2 hours, let it sit for 4 hours to get the full rising. 3 minimum. You need to find the biggest backing pan you can get. If not then you’ll have enough dough for two moderate sized pizza’s. Don’t use a flat cookie sheet. It needs to have borders. This is what I cook at home for real. This is not me copying a recipe and making it for the first time on Youtube. This is tried and tested heavy pizza. No light or low fat. 3 “Pizza” Recipes
Here are three “pizza” recipes that are perfect for snacks or quick tasty hot munchies that are great for using up your leftovers:
Pita Pizzas
- 1 small pita per person (whole wheat is great)
- 1-2 tbsp. tomato sauce/pizza sauce
- Chopped vegetables (broccoli, cauliflower, mushroom, peppers, tomatoes or whatever is available)
- Chopped black olives (optional)
- Grated cheese (feta, cheddar, mozzarella, Monterey jack)
Preheat oven 375 degrees. Spread tomato sauce over pitas. Sprinkle with chopped veggies and
olives, if using. Cover with grated cheese. Heat in oven 7 – 9 minutes until cheese is melted and
pitas are a little crisp.
Veggie Patch Pizza
This is a “borrowed” version of a menu item from Applebees (The Veggie Patch Pizza) It’s good,
low fat and delicious.
- Fat free tortillas
- Spinach, well drained
- Artichoke hearts
- Mushrooms
- Smoked Swiss cheese, grated
Mix the veggies, pile them as high as you like on the tortilla, and sprinkle with the cheese. Place
under the broiler for about 1 minute, until cheese is bubbly, and tortilla is a little crunchy.
Pizza Toast
In our family we have a very quick, low fat and inexpensive dinner called Pizza Toast.
- Toast a piece of bread and spread it with leftover spaghetti sauce.
- Add whatever toppings are in the refrigerator
and cover with a slice of nonfat Mozzarella cheese. - Microwave for two minutes or until cheese melts.

Roasted Garlic and Peppers Pizza
- 1 large head garlic, unpeeled
- 2 tablespoons olive oil
- 1 large red onion, cut into 1/2-inch-thick rings
- 1/3 cup oil packed sun dried tomatoes, drained, oil reserved
- 1 – 12 inch pizza dough shell (uncooked)
- 2 cups grated mozzarella cheese (about 6 ounces)
- 1/2 cup roasted red bell peppers from jar, cut into 1/2 inch strips
- 2/3 cup (about 2 1/2 ounces) crumbled feta cheese
- 4 tablespoons chopped fresh basil or 1 tablespoon dried
- 2 tablespoons chopped fresh parsley
Preheat oven to 375 deg. F. Slice top off garlic head; place in small baking dish. Drizzle with 1 tablespoon olive oil. Brush baking sheet with 1/2 tablespoon olive oil. Place onion slices on sheet and brush onion with 1/2 tablespoon olive oil. Bake garlic and onion until garlic cloves are light brown and soft and onion is tender, about 45 minutes.
Remove from oven; let cool.
Using fingers, squeeze out roasted garlic cloves into food processor; add sun dried tomatoes. Using on/off turns, process until almost smooth, adding enough reserved oil form sun dried tomatoes to form paste. (Onions and garlic mixture can be prepared 1 day ahead. Cover separately and refrigerate.)
Prepare pizza dough of choice and have it ready to be topped. Spread garlic paste evenly over crust. Top with mozzarella cheese, onion, pepper strips and feta cheese. Sprinkle with 2 tablespoons basil and 1 tablespoon parsley.
Bake pizza until crust is golden brown and cheese bubbles. Transfer to cutting board. Cool 5 minutes. Sprinkle with remaining 2 tablespoons basil and 1 tablespoon parsley. Cut into wedges and serve.

Making Pizza – Part 2 – Sauce
The sauce is amongst the most important thing for the pizza and everyone has their own recipe. I have researched what the restaurants do and have seen countless videos. They mostly just use a base tomato sauce with sparse spicing if they add any. Sometimes they may add garlic but usually not. -Don’t you DARE add onions to the sauce. The sauce will not freeze properly and water will collect at the top. Also no restaurant does this. So don’t do it. -If your tomatoes aren’t that zingy-sweet tomato flavor, then add sugar a tsp at a time and taste. Don’t keep adding and adding sugar. If 3 tsp isn’t enough then you may have old/bad tomatoes. -When refrigerating or freezing, the longer it sits, the more it loses its flavor. I don’t know why. I would say it stays good for 2 weeks in the fridge. Freezer maybe a month or so. Put the sauce in the coldest part of the fridge. You can still use it of course until it goes bad. -If you don’t use product of Italy tomatoes (because I know you wont), then DRAIN the water out of your canned whole tomatoes. If you can get all your tomato product of Italy for a good price, then do it. Here in Canada it’s a no-go due to cost. What works best is to just have a very tomato sauce and then add the spice later. I tried without the spice and it’s not as good without it. If you add too much spice or powerful spice then it tastes like spaghetti sauce which means it tastes like home cooking. You have to understand. We are not after spaghetti sauce home …
